WHere is a simplified version of a cocktail from a new cocktail list. This is a batch prepared mix which is loaded with tastes of a festive period, rendering it ideal for a holiday party. Reserve the remaining citrus syrup to use in brunch beverages, sweets, or for additional servings of this cocktail.

Yields 10 servings
To make the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Premix (yields 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Method
To prepare the Syrup: Put all the components in a pot, bring to a simmer, agitating so the sugar melts. After that, take off the heat allowing it to reach room temperature fully. Pour into a sealable bottle, seal and store in the refrigerator, it can be stored for about one month.
For the Batch Mix: Combine all the liquid ingredients into one big jug, allow it to infuse for one hour, then strain , ideally through a fine cloth, making it completely strained.
For serving: Measure 85ml of your cocktail base into a stirring glass packed with ice, gently stirring carefully for one minute until cold. Pour to a cold coupe glass or similar, top with some cranberries and complete it by giving it a light spray of mandarin oil over the drink.
